WHY FREEZE-DRYING?

So, what exactly is freeze-drying?

Freeze-drying is a food preservation process that starts by freezing the food at very low temperatures and then placing it under a vacuum.

Under these conditions, the ice inside the food turns directly into water vapour without going through the usual liquid stage. This process is called sublimation.

The result?

A lightweight, crunchy food with much of its original structure, flavour and colour retained.


FROM FRESH VEGETABLE TO CRISPY SNACK

01 — START WITH REAL VEGETABLES 🥕

We begin with vegetables like carrots, beetroot, okra and potatoes.

No vegetable-shaped snacks.

Actual vegetables.


02 — PREPARE THEM

The vegetables are cleaned and prepared before going through the freeze-drying process.

Depending on the vegetable and recipe, they may be cooked or seasoned before processing.


03 — FREEZE ❄️

The prepared vegetables are rapidly frozen at very low temperatures.

This turns the water inside the vegetables into ice.


04 — VACUUM + DRY

The frozen vegetables are placed inside a vacuum chamber.

The ice is gradually removed as water vapour through sublimation.

This removes moisture without conventional high-temperature frying.


05 — CRUNCH 💥

What's left is a lightweight, crispy vegetable snack.

The vegetable changed.
The craving didn't.


WHY NOT JUST FRY THEM?

Because we wanted to create something different.

Traditional fried snacks rely on oil and high-temperature frying to create their crunch.

Freeze-drying works differently.

Instead of frying vegetables in oil, we remove their moisture through controlled freezing and vacuum drying.

That gives us the texture we're looking for:

LIGHT.

CRISPY.

CRUNCHY.

VEGGIE-FORWARD.

And most importantly:

No deep frying is needed to create the crunch.


WHAT HAPPENS TO THE VEGETABLE?

One of the coolest things about freeze-drying is how dramatically the texture changes.

A fresh carrot is firm and juicy.

A freeze-dried carrot becomes:

LIGHT + CRISPY + CRUNCHY

The water has been removed, but the vegetable's physical structure remains remarkably recognizable.

WHY DOES IT TASTE SO DIFFERENT?

Removing moisture concentrates the food's solids.

That means the natural flavours of the vegetable can become more noticeable in the finished product.

The result isn't supposed to taste like a conventional potato chip.

It's supposed to taste like a vegetable transformed into a completely different snacking experience.


FREEZE-DRIED ≠ DEHYDRATED

They're often confused, but they're not the same process.

Food is dried using heat.

Heat → moisture removal → dried food

FREEZE-DRYING

Food is frozen first and then dried under vacuum.

Freeze → vacuum → sublimation → crispy food

The processes, textures and resulting eating experiences can be very different.
